Kishu-bincho-tan is a premium white charcoal (bincho-tan) produced in Wakayama Prefecture from ubame-gashi (ubame oak), regarded as the finest charcoal in the world. The production process involves slowly carbonizing the wood at low temperature, then rapidly raising the kiln temperature above 1,000°C before smothering the glowing charcoal with ash and sand. The result is an exceptionally dense, long-burning charcoal that produces intense, clean heat without smoke or odor — prized by top chefs for grilling yakitori, unagi, and other Japanese cuisine.
